Ingredients:

  • 100g buckwheat soba noodles
  • 1/2 cup shelled edamame, cooked
  • 1/2 red bell pepper, thinly sliced
  • 1/2 yellow bell pepper, thinly sliced
  • 1 carrot, julienned
  • 1/4 cup cilantro, chopped
  • 2 tablespoons mint leaves, torn
  • 2 tablespoons basil leaves, torn

For Sesame-Ginger Dressing:

  • 2 tablespoons rice vinegar
  • 1 tablespoon low-sodium soy sauce
  • 1 tablespoon sesame oil
  • 1 teaspoon grated ginger
  • 1 small garlic clove, minced
  • 1 teaspoon honey
  • 1 teaspoon toasted sesame seeds

Instructions:

  1. Cook soba noodles according to package instructions (usually 4-5 minutes).
  2. Rinse noodles under cold water until completely cool, drain well.
  3. In a large bowl, combine cooled noodles, edamame, bell peppers, carrot, and herbs.
  4. In a small bowl, whisk together all dressing ingredients.
  5. Pour dressing over noodle mixture and toss gently to combine.
  6. Sprinkle with additional sesame seeds before serving.
  7. Serve chilled.
