Ingredients:

  • 200g buckwheat soba noodles
  • 1 cup edamame, shelled and cooked
  • 1 red bell pepper, thinly sliced
  • 1 yellow bell pepper, thinly sliced
  • 1 carrot, julienned
  • 1/4 cup cilantro, chopped
  • 2 tablespoons green onions, sliced
  • 1 tablespoon sesame seeds

Sesame-Ginger Dressing:

  • 2 tablespoons low-sodium soy sauce
  • 2 tablespoons rice vinegar
  • 1 tablespoon sesame oil
  • 1 tablespoon tahini
  • 1 teaspoon honey
  • 1 teaspoon grated ginger
  • 1 clove garlic, minced

Instructions:

  1. Cook soba noodles according to package instructions, about 4-5 minutes.
  2. Rinse under cold water and drain well.
  3. In a large bowl, combine noodles, edamame, bell peppers, carrot, cilantro, and green onions.
  4. In a small bowl, whisk together all dressing ingredients.
  5. Pour dressing over the noodle mixture and toss to combine.
  6. Sprinkle with sesame seeds before serving.
  7. Serve chilled.
