Ingredients:
- 200g buckwheat soba noodles
- 1 cup edamame, shelled and cooked
- 1 red bell pepper, thinly sliced
- 1 yellow bell pepper, thinly sliced
- 1 carrot, julienned
- 1/4 cup cilantro, chopped
- 2 tablespoons green onions, sliced
- 1 tablespoon sesame seeds
Sesame-Ginger Dressing:
- 2 tablespoons low-sodium soy sauce
- 2 tablespoons rice vinegar
- 1 tablespoon sesame oil
- 1 tablespoon tahini
- 1 teaspoon honey
- 1 teaspoon grated ginger
- 1 clove garlic, minced
Instructions:
- Cook soba noodles according to package instructions, about 4-5 minutes.
- Rinse under cold water and drain well.
- In a large bowl, combine noodles, edamame, bell peppers, carrot, cilantro, and green onions.
- In a small bowl, whisk together all dressing ingredients.
- Pour dressing over the noodle mixture and toss to combine.
- Sprinkle with sesame seeds before serving.
- Serve chilled.
