Ingredients:

  • 1 cup rice
  • 6 cups chicken or fish stock
  • 1 tablespoon minced ginger
  • 3 cloves garlic, minced
  • 1 small onion, diced
  • 1 cup flaked white fish
  • 2 tablespoons fish sauce
  • 2 hard-boiled eggs, halved
  • 3 tablespoons chopped green onions
  • 1 tablespoon fried garlic
  • Calamansi or lemon wedges

Instructions:

  1. Sauté garlic, onion, and ginger until fragrant.
  2. Add rice and stir to coat with oil.
  3. Pour in stock and bring to a boil.
  4. Reduce heat and simmer for 20-25 minutes until rice is very soft.
  5. Add fish sauce and flaked fish, cook for 5 more minutes.
  6. Serve topped with hard-boiled egg, green onions, and fried garlic.
  7. Squeeze calamansi or lemon juice before eating.
