Ingredients:
- 100g buckwheat soba noodles
- 1/2 cup shelled edamame, cooked
- 1/2 red bell pepper, thinly sliced
- 1/2 yellow bell pepper, thinly sliced
- 1 carrot, julienned
- 1/4 cup cilantro, chopped
- 2 tablespoons mint leaves, torn
- 2 tablespoons basil leaves, torn
For Sesame-Ginger Dressing:
- 2 tablespoons rice vinegar
- 1 tablespoon low-sodium soy sauce
- 1 tablespoon sesame oil
- 1 teaspoon grated ginger
- 1 small garlic clove, minced
- 1 teaspoon honey
- 1 teaspoon toasted sesame seeds
Instructions:
- Cook soba noodles according to package instructions (usually 4-5 minutes).
- Rinse noodles under cold water until completely cool, drain well.
- In a large bowl, combine cooled noodles, edamame, bell peppers, carrot, and herbs.
- In a small bowl, whisk together all dressing ingredients.
- Pour dressing over noodle mixture and toss gently to combine.
- Sprinkle with additional sesame seeds before serving.
- Serve chilled.
