Ingredients:

  • 1 whole sea bass (about 500-600g), cleaned and scored
  • 3 tablespoons fresh ginger, julienned
  • 3 tablespoons scallions, julienned
  • 2 tablespoons soy sauce
  • 1 tablespoon rice wine or sake
  • 1 teaspoon sesame oil
  • 2 teaspoons vegetable oil
  • 1/4 teaspoon white pepper
  • 1 bunch Chinese broccoli, trimmed

Instructions:

  1. Place the fish on a heatproof plate that will fit in your steamer.
  2. Sprinkle half the ginger inside and on top of the fish.
  3. Mix soy sauce, rice wine, white pepper, and sesame oil, drizzle over fish.
  4. Steam fish for 8-10 minutes until cooked through.
  5. Meanwhile, quickly stir-fry Chinese broccoli with a little oil and garlic until crisp-tender.
  6. Heat vegetable oil until very hot. Place remaining ginger and scallions on fish.
  7. Pour the hot oil over the fish to sizzle the aromatics.
  8. Serve immediately with the Chinese broccoli.
