Ingredients:
- 2 bundles (180g) buckwheat soba noodles
- 1 cup edamame, shelled
- 2 cups bok choy, chopped
- 2 small sardines, grilled (or 1 can sardines in olive oil)
- 2 tablespoons soy sauce
- 1 tablespoon rice vinegar
- 1 teaspoon sesame oil
- 1 teaspoon grated ginger
- 1 tablespoon toasted sesame seeds
- 1 green onion, sliced
Instructions:
- Cook soba noodles according to package directions (usually 4-5 minutes).
- Rinse with cold water and drain well.
- Steam bok choy and edamame for 3-4 minutes until tender-crisp.
- Mix soy sauce, rice vinegar, sesame oil, and ginger in a small bowl.
- Place noodles in a bowl, top with vegetables and grilled sardines.
- Drizzle with sauce and garnish with sesame seeds and green onion.
