Ingredients:

  • 2 bundles (180g) buckwheat soba noodles
  • 1 cup edamame, shelled
  • 2 cups bok choy, chopped
  • 2 small sardines, grilled (or 1 can sardines in olive oil)
  • 2 tablespoons soy sauce
  • 1 tablespoon rice vinegar
  • 1 teaspoon sesame oil
  • 1 teaspoon grated ginger
  • 1 tablespoon toasted sesame seeds
  • 1 green onion, sliced

Instructions:

  1. Cook soba noodles according to package directions (usually 4-5 minutes).
  2. Rinse with cold water and drain well.
  3. Steam bok choy and edamame for 3-4 minutes until tender-crisp.
  4. Mix soy sauce, rice vinegar, sesame oil, and ginger in a small bowl.
  5. Place noodles in a bowl, top with vegetables and grilled sardines.
  6. Drizzle with sauce and garnish with sesame seeds and green onion.
