Ingredients:
- 1 block silken tofu, drained
- 1 cup baby spinach
- 1/2 cup mushrooms, sliced
- 2 green onions, chopped
- 1 tablespoon olive oil
- 1/2 teaspoon turmeric (optional, for color)
- 1 tablespoon low-sodium soy sauce
- 1/2 teaspoon garlic powder
- 1 tablespoon nutritional yeast (optional)
- 1 teaspoon furikake seasoning
- Black pepper to taste
Instructions:
- Heat olive oil in a non-stick pan over medium heat.
- Add mushrooms and cook until they release their moisture, about 3-4 minutes.
- Add spinach and cook until wilted, about 1 minute.
- Gently crumble the silken tofu into the pan.
- Sprinkle with turmeric, garlic powder, and nutritional yeast if using.
- Cook for 2-3 minutes, stirring gently to keep some texture.
- Add soy sauce and stir to incorporate.
- Remove from heat and top with green onions and furikake.
- Season with black pepper to taste.
