Ingredients:

  • 1 block silken tofu, drained
  • 1 cup baby spinach
  • 1/2 cup mushrooms, sliced
  • 2 green onions, chopped
  • 1 tablespoon olive oil
  • 1/2 teaspoon turmeric (optional, for color)
  • 1 tablespoon low-sodium soy sauce
  • 1/2 teaspoon garlic powder
  • 1 tablespoon nutritional yeast (optional)
  • 1 teaspoon furikake seasoning
  • Black pepper to taste

Instructions:

  1. Heat olive oil in a non-stick pan over medium heat.
  2. Add mushrooms and cook until they release their moisture, about 3-4 minutes.
  3. Add spinach and cook until wilted, about 1 minute.
  4. Gently crumble the silken tofu into the pan.
  5. Sprinkle with turmeric, garlic powder, and nutritional yeast if using.
  6. Cook for 2-3 minutes, stirring gently to keep some texture.
  7. Add soy sauce and stir to incorporate.
  8. Remove from heat and top with green onions and furikake.
  9. Season with black pepper to taste.
