Ingredients:

  • 1/2 cup rolled oats
  • 1 cup water or vegetable broth
  • 1 teaspoon sesame oil
  • 1 soft-boiled egg
  • 1/2 cup steamed spinach
  • 1 tablespoon furikake seasoning
  • 1 green onion, sliced
  • 1 teaspoon soy sauce
  • 1/4 avocado, sliced (optional)

Instructions:

  1. Bring water or broth to a boil in a small pot.
  2. Add oats, reduce heat, and simmer for 5-7 minutes until creamy.
  3. Meanwhile, prepare a soft-boiled egg (boil for 6-7 minutes).
  4. Stir sesame oil into cooked oatmeal.
  5. Transfer oatmeal to a bowl.
  6. Top with steamed spinach, soft-boiled egg, avocado if using.
  7. Sprinkle with furikake seasoning and green onions.
  8. Drizzle with soy sauce.
