Ingredients:
- 200g sushi-grade salmon, cut into 1/2-inch cubes
- 1 cup cooked brown rice, cooled
- 1/2 cucumber, diced
- 4 radishes, thinly sliced
- 1/2 avocado, diced
- 1/2 cup edamame, shelled and cooked
- 1 sheet nori, cut into strips
- 1 tablespoon sesame seeds
Poke Sauce:
- 2 tablespoons low-sodium soy sauce
- 1 teaspoon sesame oil
- 1 teaspoon rice vinegar
- 1/2 teaspoon grated ginger
- 1/2 teaspoon honey
- 1/4 teaspoon wasabi paste (optional)
Instructions:
- Mix all sauce ingredients in a small bowl.
- Gently toss the salmon cubes with half of the sauce and let marinate for 10 minutes.
- Place brown rice in a bowl.
- Arrange marinated salmon, cucumber, radishes, avocado, and edamame over the rice.
- Drizzle with remaining sauce.
- Garnish with nori strips and sesame seeds.
