Ingredients:

  • 200g sushi-grade salmon, cut into 1/2-inch cubes
  • 1 cup cooked brown rice, cooled
  • 1/2 cucumber, diced
  • 4 radishes, thinly sliced
  • 1/2 avocado, diced
  • 1/2 cup edamame, shelled and cooked
  • 1 sheet nori, cut into strips
  • 1 tablespoon sesame seeds

Poke Sauce:

  • 2 tablespoons low-sodium soy sauce
  • 1 teaspoon sesame oil
  • 1 teaspoon rice vinegar
  • 1/2 teaspoon grated ginger
  • 1/2 teaspoon honey
  • 1/4 teaspoon wasabi paste (optional)

Instructions:

  1. Mix all sauce ingredients in a small bowl.
  2. Gently toss the salmon cubes with half of the sauce and let marinate for 10 minutes.
  3. Place brown rice in a bowl.
  4. Arrange marinated salmon, cucumber, radishes, avocado, and edamame over the rice.
  5. Drizzle with remaining sauce.
  6. Garnish with nori strips and sesame seeds.
