Ingredients:
- 250g rice noodles (bihon)
- 200g mixed seafood (shrimp, squid, mussels)
- 1 small carrot, julienned
- 1 small bell pepper, julienned
- 1 cup cabbage, shredded
- 1 small onion, sliced
- 3 cloves garlic, minced
- 2 tablespoons fish sauce
- 2 tablespoons soy sauce
- 2 cups seafood or chicken stock
- 2 tablespoons cooking oil
- Calamansi or lemon wedges for serving
Instructions:
- Soak rice noodles in warm water for 10-15 minutes until softened, then drain.
- Heat oil in a wok or large pan, sauté garlic and onions until fragrant.
- Add seafood and cook until just done (about 2-3 minutes).
- Add vegetables and stir-fry for 2 minutes.
- Pour in stock, fish sauce, and soy sauce.
- Add soaked noodles and toss until the liquid is absorbed.
- Serve hot with calamansi or lemon wedges.
