Ingredients:
- 1 tablespoon miso paste
- 2 cups water or dashi stock
- 1/4 block silken tofu, cubed
- 1 tablespoon dried wakame seaweed
- 4-5 thin slices of shiitake mushrooms
- 1 soft-boiled egg
- 1/2 cup steamed rice
- 1 tablespoon sliced green onions
Instructions:
- Soak wakame in cold water for 5 minutes, then drain.
- Bring water or dashi to a simmer in a small pot.
- Turn off heat and whisk in miso paste until dissolved.
- Add tofu, wakame, and shiitake mushrooms.
- Place steamed rice in a bowl, pour miso soup over it.
- Top with soft-boiled egg and green onions.
