Ingredients:

  • 1 small salmon fillet (about 100g)
  • 1 teaspoon mirin
  • 1 teaspoon soy sauce
  • 1/2 cup cooked brown rice
  • 1 cup water
  • 1 tablespoon miso paste
  • 2 tablespoons cubed silken tofu
  • 1 tablespoon dried wakame seaweed, rehydrated
  • 1 tablespoon sliced green onions
  • 1 tablespoon pickled vegetables (store-bought or homemade)
  • 1/2 sheet nori, cut into strips

Instructions:

  1. Marinate salmon in mirin and soy sauce for 10 minutes.
  2. Grill or broil salmon for about 5-7 minutes until cooked through.
  3. For miso soup: Bring water to a simmer in a small pot. Remove from heat and whisk in miso paste. Add tofu, wakame, and green onions.
  4. Arrange cooked rice in a bowl.
  5. Serve salmon, miso soup, and pickled vegetables together.
  6. Garnish rice with nori strips.
