Ingredients:
- 1 small salmon fillet (about 100g)
- 1 teaspoon mirin
- 1 teaspoon soy sauce
- 1/2 cup cooked brown rice
- 1 cup water
- 1 tablespoon miso paste
- 2 tablespoons cubed silken tofu
- 1 tablespoon dried wakame seaweed, rehydrated
- 1 tablespoon sliced green onions
- 1 tablespoon pickled vegetables (store-bought or homemade)
- 1/2 sheet nori, cut into strips
Instructions:
- Marinate salmon in mirin and soy sauce for 10 minutes.
- Grill or broil salmon for about 5-7 minutes until cooked through.
- For miso soup: Bring water to a simmer in a small pot. Remove from heat and whisk in miso paste. Add tofu, wakame, and green onions.
- Arrange cooked rice in a bowl.
- Serve salmon, miso soup, and pickled vegetables together.
- Garnish rice with nori strips.
