Ingredients:

  • 1 cup cooked brown rice
  • 100g salmon fillet
  • 1 tablespoon mirin
  • 1 tablespoon soy sauce
  • 1 teaspoon honey
  • 1/4 cup pickled vegetables (carrots, daikon, cucumber)
  • 1 tamago egg (Japanese rolled omelette)*
  • 1 tablespoon green onions, chopped
  • 1 teaspoon toasted sesame seeds
  • 1 sheet nori, cut into strips

*For tamago:

  • 2 eggs
  • 1 teaspoon mirin
  • 1 teaspoon soy sauce
  • 1 teaspoon sugar

Instructions:

  1. Marinate salmon in mirin, soy sauce, and honey for 15 minutes.
  2. For tamago: Beat eggs with mirin, soy sauce, and sugar. Cook in a thin layer in a non-stick pan, rolling up as it cooks to form layers. Slice when cool.
  3. Broil or grill salmon for 7-8 minutes until cooked through.
  4. Place brown rice in a bowl.
  5. Top with broiled salmon, tamago slices, and pickled vegetables.
  6. Garnish with green onions, sesame seeds, and nori strips.
