Ingredients:
- 1 cup cooked brown rice
- 100g salmon fillet
- 1 tablespoon mirin
- 1 tablespoon soy sauce
- 1 teaspoon honey
- 1/4 cup pickled vegetables (carrots, daikon, cucumber)
- 1 tamago egg (Japanese rolled omelette)*
- 1 tablespoon green onions, chopped
- 1 teaspoon toasted sesame seeds
- 1 sheet nori, cut into strips
*For tamago:
- 2 eggs
- 1 teaspoon mirin
- 1 teaspoon soy sauce
- 1 teaspoon sugar
Instructions:
- Marinate salmon in mirin, soy sauce, and honey for 15 minutes.
- For tamago: Beat eggs with mirin, soy sauce, and sugar. Cook in a thin layer in a non-stick pan, rolling up as it cooks to form layers. Slice when cool.
- Broil or grill salmon for 7-8 minutes until cooked through.
- Place brown rice in a bowl.
- Top with broiled salmon, tamago slices, and pickled vegetables.
- Garnish with green onions, sesame seeds, and nori strips.
