Ingredients:

  • 1 whole fish (about 500g, tilapia or snapper), cleaned and scored
  • 1 red bell pepper, cut into strips
  • 1 green bell pepper, cut into strips
  • 1 medium carrot, julienned
  • 1 small onion, sliced into rings
  • 3 cloves garlic, minced
  • 1/4 cup white vinegar
  • 2 tablespoons sugar
  • 1/4 cup pineapple juice (or 1/2 cup fresh pineapple chunks)
  • 1/4 cup water
  • 2 tablespoons cooking oil
  • Salt and pepper to taste
  • Oil for frying fish

Instructions:

  1. Season fish with salt and pepper. Fry in hot oil until golden and cooked through (about 4-5 minutes per side). Set aside.
  2. In the same pan, heat 2 tablespoons oil. Sauté garlic and onions until fragrant.
  3. Add bell peppers and carrots, stir-fry for 2 minutes.
  4. Mix vinegar, sugar, pineapple juice, and water, pour into the pan.
  5. Bring to a simmer and cook until slightly thickened, about 3-4 minutes.
  6. Place fried fish on a serving plate and pour the sweet and sour sauce over it.
  7. Let it rest for a few minutes before serving for flavors to blend.
