Ingredients:
- 1 whole fish (about 500g, tilapia or snapper), cleaned and scored
- 1 red bell pepper, cut into strips
- 1 green bell pepper, cut into strips
- 1 medium carrot, julienned
- 1 small onion, sliced into rings
- 3 cloves garlic, minced
- 1/4 cup white vinegar
- 2 tablespoons sugar
- 1/4 cup pineapple juice (or 1/2 cup fresh pineapple chunks)
- 1/4 cup water
- 2 tablespoons cooking oil
- Salt and pepper to taste
- Oil for frying fish
Instructions:
- Season fish with salt and pepper. Fry in hot oil until golden and cooked through (about 4-5 minutes per side). Set aside.
- In the same pan, heat 2 tablespoons oil. Sauté garlic and onions until fragrant.
- Add bell peppers and carrots, stir-fry for 2 minutes.
- Mix vinegar, sugar, pineapple juice, and water, pour into the pan.
- Bring to a simmer and cook until slightly thickened, about 3-4 minutes.
- Place fried fish on a serving plate and pour the sweet and sour sauce over it.
- Let it rest for a few minutes before serving for flavors to blend.
